Thai Short Ribs
8 Korean cut beef short ribs
Dry
1tbs coriander seeds
1tbs black pepper
1 Thai birds eye chili
3 cubes palm sugar
Wet
1 tbs fresh ginger, grated
1 tbs soya sauce
1 tbs fish sauce
1 clove of garlic, grated
Method
Crush dry ingredients in a mortar and postal add wet ingredients and marinate short ribs for minimum 12 hours
Grill on the bbq or in oven
Dress with Thai basil and toasted sesame seeds with lime wedges on side
Corn
Grill corn on bbq, open flame or on oven grill
Chipotle butter
1 small can of chipotle peppers in adobo sauce
100g salted butter
Fresh oregano
In a food processor blend the chipotles and oregano until smooth add cubes of cold butter one at a time until all mixed together and butter has gone smooth
Brush grilled corn with butter, grate some cojito cheese on top and fresh oregano leaves serve with lime wedges.
